Eggplant Timbale-Timballo di Melanzane Recipe

Eggplant Timbale-Timballo di Melanzane has pasta and pea-based meat sauce. Delicious grilled eggplant slices wrap the pasta and bake it. A holiday or special occasion favorite family recipe.

Ingredient

– For the Meat Sauce: – 3 Tablespoons extra-virgin olive oil – ¼ cup of onion chopped you can use sweet onion or yellow onion – 1 ½ pounds lean ground beef you could do a mixture of pork/beef or however you prefer – 1 cup dry white wine – 2-28 ounce can of whole tomatoes  – 6 fresh basil leave – 1 cup of fresh or frozen baby pea – 2 ½ teaspoons sea salt – ¼ teaspoon black pepper – Eggplant – 2 huge or – ⅓ cup extra-virgin olive oil – Freshly ground pepper – Pasta – 1 lb penne – A few handfuls of fresh basil

To make the sauce, heat oil in a medium-sized sauce pan or Dutch oven on medium heat. Add onion and cook 2 minutes. Continue cooking for 5 minutes with garlic. Add beef and sauté, stirring often.

Separate large lumps and cook until meat is no longer pink, 10 minutes. Stir in wine and let it evaporate. Over medium-low heat, thicken the sauce with tomatoes and basil. Stir in peas. Salt, pepper, and simmer.

My ragu simmers for 2 hours. If needed, add water while simmering to thin it out. Prepare this a day or two ahead. Meanwhile, boil a large pot of water. Boil pasta until 2 minutes from al dente in salted water.

If you made the sauce a day or two ahead, reheat it to mix with pasta. Slice eggplant while sauce simmers. EGGPLANT: Pre-heat a gas or charcoal grill or heat a grill pan on medium-high.

Pare eggplants vertically into 1/4-inch slices. Salt and pepper eggplant slices and brush with olive oil with a pastry brush. Tenderize and grill eggplants 4-5 minutes per side. You want gold slices. Place grilled eggplant slices on a baking sheet.

Grill eggplant while heating sauce from a day or two earlier in a sauce pan on low. Add pasta to bowl after draining. Add sauce to pasta and stir. Now add cheese (dairy-free or regular). Coat everything and distribute cheese evenly.

Brush springform pan with olive oil. So they can be folded over the top, place the longest eggplant slices in the spring form pan's bottom. Eliminate open spaces. On layered eggplant slices, pasta mixture

Cover pasta with eggplant slices. Fill gaps with leftover eggplant slices. A baking dish can catch drips and make the springform pan easier to remove from the oven. Bake 30 minutes.
