Although it looks impressive, homemade French silk pie is easy to make. A buttery pie crust holds a rich, airy chocolate filling, whipped cream, and chocolate shavings.

Make the pie crust: Buy or make it. Roll the pie crust and place it in a 9-inch pie plate. This recipe makes a lot of filling, so use a 2-inch pie plate.

Refrigerate for 15 minutes after trimming and decorating the edges. Let the dough relax to avoid shrinking in the oven. Blind bake the pie crust before adding filling.

Start by heating the eggs and sugar in a double boiler. I recommend using a thermometer to ensure fully cooked eggs. Remove the mixture from heat at 160°F.
