One-Pan Tuna Pasta

Ingredients: – 8 oz (225g) pasta (such as spaghetti, penne, or fusilli) – 2 tablespoons olive oil – 1 small onion, finely chopped – 2 cloves garlic, minced

– 1 can (5 oz/140g) tuna in water, drained – 1 can (14.5 oz/411g) diced tomatoes, undrained – 1 cup chicken or vegetable broth – 1 teaspoon dried oregano – 1/2 teaspoon dried basil

– Salt and pepper, to taste – Grated Parmesan cheese, for serving – Chopped fresh parsley, for garnish (optional)

Cook Pasta: In a large skillet or deep sauté pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened and fragrant, about 2-3 minutes.

Add Tuna and Tomatoes: Add the drained tuna to the skillet, breaking it up with a spoon. Stir in the diced tomatoes (with their juices) and mix well with the onion, garlic, and tuna.

Add Pasta and Broth: Add the uncooked pasta to the skillet, spreading it out evenly. Pour the chicken or vegetable broth over the pasta to cover it. If needed, add a little extra water to ensure the pasta is submerged in liquid.

Season and Simmer: Sprinkle the dried oregano and basil over the pasta mixture. Season with salt and pepper, to taste. Stir everything together and bring the mixture to a simmer.

Cover and Cook: Cover the skillet with a lid and reduce the heat to low. Let the pasta simmer gently for about 10-12 minutes, or until the pasta is cooked to your liking and most of the liquid has been absorbed, stirring occasionally.

Serve: Once the pasta is cooked, remove the skillet from the heat. Serve the one-pan tuna pasta hot, garnished with grated Parmesan cheese and chopped fresh parsley, if desired.
